Pornstar Pascual

The Pornstar Pascual is a seductive twist on the classic Pornstar Martini. The intense blood orange flavours of Sang de Pascual are combined with tropical passion fruit, fresh lime and a hint of vanilla. The egg white provides an airy foam layer that makes this cocktail not only beautiful to look at, but also deliciously soft in the mouth. Perfect for a cosy evening or as a striking aperitif.

Ingredients
• 6 cl Sang de Pascual
• 4 cl fresh lime juice
• 1.5 cl passion fruit syrup
• 0.5 cl vanilla syrup
• 3 cl egg white or vegetable foaming agent
• Garnish: ½ passion fruit
• Ice cubes

Preparation method

1. Add Sang de Pascual, lime juice, passion fruit syrup, vanilla syrup and egg white to a shaker (without ice).
2. Shake vigorously until the egg white starts to froth nicely.
3. Add ice cubes and shake again until the shaker feels nice and cold.
4. Strain the cocktail into a chilled coupe glass or martini glass.
5. Finish with half a passion fruit on top of the foam.
