Sang Sour
The Sang Sour is an elegant and rich cocktail based on Sang de Pascual. This twist on the classic whisky sour combines the bittersweet character of blood orange with the freshness of lemon and the creamy texture of egg white. An intense and balanced experience, perfect as a stylish aperitif or digestif.
Ingredients
• 6 cl Sang de Pascual
• 3 cl fresh lemon juice (juice of half a lemon)
• 1.5 cl sugar syrup
• 1 dash of Angostura bitters
• 1 egg white
• Garnish: zest of orange or lemon
Preparation method
- Separate the egg white from the egg yolk.
- Add Sang de Pascual, lemon juice, sugar syrup and egg white to a shaker (without ice).
- Shake vigorously until well mixed.
- Add ice cubes and shake again until the shaker feels nice and cold and a layer of foam forms.
- Pour the cocktail through a strainer into a chilled glass.
- Optionally finish with a few drops of Angostura bitters on top of the foam and add an orange or lemon zest for an aromatic touch.
